As a chef in high end restaurants for 38 years in 7 states, I’ve found that the best meals are the simple ones. The ones I shared with my cooks and my restaurant neighbors after grinding it out for 16 hours and doing battle in a hot, loud , crazy kitchen just trying to get it done right. Melt! is the product of that—crazy, exhausted cooks and chefs , cold beverage in hand, playing in the kitchen after spending all day in another. Telling tales and eating simple food. Sourdough with gooey Brie and apple bacon jam. Or Grilled Pound cake with mascarpone , Nutella and marshmallow fluff! It’s what happens when Chef’s unwind! Cheers! Eric Laslow
